Running Low On Steam

Off to the races we all were first thing this morning again.  The "pack" taken care of, cereal served up to Rip Tail Snorter No. 1 with him then delivered to Day 4 of the Wiarton Salvation Army's Bible Vacation School.

Back home again I needed to tackle something that has been bugging me now for a couple of weeks.  Today was the day I was going to tackle the dreaded job of cleaning the fridge.

"Honestly as soon as I opened the door the thought went through my head to shut it and walk away."

*Sigh* I kept the door open and got right to it .... do you know it looked worse then it really was.  Once the chicken was packaged and put in the freezer, mushrooms cooked and also bagged for the freezer, a few things shifted around, a couple of vegetable parts disposed into the compost, it wasn't too bad to wipe down at all.

"All sparkly again for hopefully another couple of weeks..  Really with the upcoming Masterson Reunion I needed to get this organized to make room for Reunion Food Fare I will be preparing.  There certainly was a method to my madness this day...lol."

The remainder of my morning was spent doing more "Crabby Cabbie" stuff.  Oh man there are some days when the "Crabby Cabbie" and his stuff  makes me "crabby" I am sure ... lol.  With that finally out of the way I had to wash the kitchen floor.  Once I start sticking to it, it is time to "get r' done".

Remember my post from Sunday?  When Aiden and I were busy in the kitchen making ....

"A double batch of Peanut Butter Chocolate Chip Cookies ..."

".... and a dozen Buttermilk Banana Bread Muffins?"

Everything is all gone but for two cookies !  Rob said they were the best cookies I have every made, and of course the best Banana Muffins ... um, he says that about everything I make that he likes ?

I am thinking with Aiden's Daddy, Mommy and the other Rip Tail Snorter arriving this weekend, I best be getting a new supply baked.  Recipe's Please:

Peanut Butter Chocolate Chip Cookies
Recipe adapted from The Looneyspoons Collection, by http://
www.aprettylifeinthesuburbs.com/

1 1/4 cups flour
1 cup rolled oats
1/2 tsp baking soda
1/4 tsp salt
3/4 cup packed brown sugar
1/3 cup butter or margarine
1/3 cup peanut butter
1 egg
1/3 cup chocolate chips

Preheat your oven to 350 degrees.

In a mixer, combine the sugar, butter, peanut butter and egg, until smooth.

In another bowl mix together the flour, oats, baking soda and salt.

Then add the flour mix to the butter mix and combine.

Mix in the chocolate chips.

Roll the cookie dough into 1 1/2 inch balls, then place them on a cookie sheet about 2 inches apart. Using a fork, gently flatten the cookies.

Bake for about 10 minutes. The cookies should be soft and chewy.

and ....

Buttermilk Banana Bread

Recipe Source: melskitchencafe.com

NOTE: Decrease Sugar to 1 cup; increase Bananas to 1 1/2 cups makes this recipe just as moist & flavourable.

1/2 cup margarine or butter, softened
1 1/2 cups sugar
2 eggs
1 cup mashed bananas (3 avg. size)
4 tbsp buttermilk
1/2 tsp vanilla
1 3/4 c. flour
1 tsp baking powder
1/4 tsp salt
1/8 tsp baking soda

Grease & flour pan(s) or muffin tins (I used muffin liners), once Oven has been set to preheat at 350*F.

In large bowl cream butter & sugar; add eggs, bananas, buttermilk & vanilla until batter is well mixed. Mix together dry ingredients and blend into the wet. Mix until well combined. Divide batter into greased & floured pan(s) and bake at 350*F for 50-55 minutes or until toothpick inserted comes out clean. Muffins will take less time. Times vary with oven temps.

**You can make your own buttermilk by adding a bit of lemon juice or white vinegar.

Not only will I be making a repeat of these hopefully tomorrow, I will be thinking about what I will be getting together Saturday for my Family Reunion too.

Later this day Rob put on his "Crabby Cabbie" hat and took off into the overcast day for work.  I was so happy, happy, happy ... as we are finally getting a good rain !!!  The rain is to continue on into Saturday and clearing by Sunday.

Once I collected Aiden from VBS late this afternoon, we stopped into the Foodland Store to pickup some bread before heading home to start supper.

"Our Supper tonight was Homemade Potato and Egg Salad I had made today, and fresh cooked Beets I had picked from the garden."

"Aiden shares his father's love of Beets.  He was looking on here until I was finished taking the picture then began enjoying as much as I."

I am thinking I have shared this awhile back, maybe last Year, however thought it would be fun to share again.  Check out the following link, as it is fun !

I apparently am not the only one who has been running low on steam around here ....

"Dead to the World my little man is before 8:00 pm.  Usually he is up until at least 9:00 pm.  I am sure the very busy week is catching up to him as much as it has been for me!  I am wishing  Poppa was home to carry him into his bed, however I am sure I will manage to maneuver him somehow."

I had a chuckle to myself today, as I have been noticing people "googling" North of the Checkerboard to find my blog ... remember I am "South of the Checkerboard" everyone, South !!!  LOL ...

Oh yes, I would LOVE should you leave me a comment anonymously, please leave your name as well, as I do love reading your comments, with each and everyone most appreciated and encouraging.

On that note I am going to call it a night myself, as I am certain there will be still another busy day around the corner for me tomorrow, "Just North of Wiarton & South of the Checkerboard".
