May The Luck Of The Irish Rub Off On All Of "US" !

"Happy St. Patrick's Day to Everyone"


There was no Corned Beef and Cabbage at our house today, as Rob doesn't care for Corned Beef.  I love Corned Beef, as does my brother.  I am thinking I am going to have to make it and have him for lunch some day so I can have my "fill" and he his ... lol.

However, there was something being made in my kitchen today.  I tried out a new recipe I had found on Pinterest at Ally's Kitchen for a "Mascarpone Flax Banana Nut Bread".  I had picked up some Mascarpone Cheese when I was in Owen Sound the other day at the No Frills store for $7.99, opposed to Foodland's price of $9.99.  A two dollar savings is two more dollars in my pocket, since I was going right by the No Frills store anyhow ..... and after making and tasting this bread, I have no regrets about paying the $7.99 for the cheese !

"I couldn't wait until completely cool before I had to try a piece.  Can you believe it?  I have another Easy peasy as 1-2-3 fantastic recipe to add to my collection of "keepers" !!!"


This bread is so moist and tasty I can not "NOT" share it, as you know me and sharing????  Here it is ....

Mascarpone Flax Banana Nut Bread

Yields: 2 regular loaves or 3 small loaves

Preheat Oven to 350*F

What you need:

¾ cup dark brown sugar

2 tsp ground cinnamon
1 tsp allspice
1 tsp sea salt
1 ½ tsp baking powder
2 tsp baking soda
2 cups ground flax
2 cups whole wheat (or white) all-purpose flour
4-6 large to medium well-ripened mashed bananas
12 TB softened/room temperature butter
3 beaten eggs
1 ½ tsp vanilla
8 oz mascarpone
¾ cup milk
1 ½ cups chopped walnuts (I like nuts!)


What you do:
In large mixing bowl, combine first 8 ingredients: sugar, cinnamon, allspice, salt, baking powder, baking soda, flax and flour. Mix ingredients together.
In a medium mixing bowl, combine butter and eggs and blend. Add mashed bananas and blend. Add vanilla and mascarpone and blend. Combine this mixture with dry ingredients in large mixing bowl. The mixture will be quite thick. Start thinning with addition of a little milk at a time. Finally, add walnuts.

Fill loaf pan(s) (or muffin tins) three quarters full. Bake approximately 50=60 minutes or until a toothpick comes out basically clean. (Muffins will cook quicker.) Allow to cool on rack for at least 30 minutes before cutting.


NOTE:  I did not have any Allspice, or ground cloves to make some up, along with Ginger & Cinnamon.  What I used in place was 1/2 tsp of Ginger.

I will definitely be keeping an eye on Ally's Kitchen to see what other Bold & Bohemian Recipes she's got cooking and baking in her kitchen, as I don't want to miss another one if it is like this one I made today !!!  Thanks Ally !

After all this baking and taste testing was over, it was time to think about some Dinner.  Leftover chicken needed using up, so it was an Easy Peasy as 1-2-3 Biquick Chicken Pot Pie for today.

Two loads of laundry washed and hung out on the clothes line to dry, and a very dirty vehicle got its inside vacuumed and cleaned.



It is a lot of work cleaning out a vehicle of leftover Winter muck and dog hair, but I "got r' done".  Then it was time to come in to rest a bit and do some work on "Cindy's Recipe Exchange" on Facebook.

"Today I was able to post 16 Categories for Recipes with Photos.  This one was posted just today by not only an Exchange Member, but my girlfriend, Vicki.  I cannot wait until I try this Greek Phyllo Wrapped Chicken, it looks "oh too good", so stayed future tuned ... lol


Oh man, I just glanced up at the clock and here it is 9:25 pm already !!

On that note, I think I will call it and night by doing a "jig" straightway to my bed very shortly here, "Just North of Wiarton & South of the Checkerboard".

The mascarpone does make all the difference...it's reserved for special occasions, and, I agree, I'd take this over corned beef!   3. I don't care much about Corned beef too unless it's made from scratch. The store-bought version is way too salty for me (says somebody who can eat a can of homemade pickles in one night...LOL:)I love your temperatures. Can't wait until I don't have to wear warm clothes any more. We have temperatures in 40s today and nasty rain. But it should get better by Tuesday. Have a nice weekend!!

  5. Cindy I have some stuff that might take that stain out .I used it on my new comforter that a whole pen full of red ink had leaked onto it every bit came out ,remind me to give you some next time I see you
